My mom is not a regular mom, but she is definitely a cool mom. My mom has always been one of my biggest supporters in life and one of her ways of supporting me is helping me stick to my diet goals. She knows that I do not want things like gluten or processed sugar. A few years ago, she figured out how to make a delicious, low-carb cheesecake that I could eat.
At first, she only experimented with making a vanilla cheesecake, but then she made a low-carb chocolate version and the result was perfection. Life was changed forever and my inner chocolate addict rejoiced. I love that I live in a world where I can have chocolate desserts and pursue my health goals at the same time.
My Mom’s Low-Carb Chocolate Cheesecake Recipe
This is my mom’s chocolate cheesecake recipe. Sometimes, when we feel like it, we make a chocolate cheesecake and a vanilla cheesecake. When you cannot choose, have both.
Ingredients:
1 cup plain yoghurt
2 cups cream cheese
3 tsp gelatine
3 tbsp xylitol or 4 tbsp erythritol
1 tsp vanilla extract
4 tbsp cacao or cocoa powder
2 tbsp boiling water
Instructions:
Dissolve the sweetener in the boiling water. Put all the ingredients together in a food processor, except the dark chocolate, and mix together for two minutes or until smooth. If you do not have a food processor, you can mix it together with a wooden spoon, but you will need some elbow grease. Spread into a tray or ramekins, grate the dark chocolate over the cheesecake, and put in the fridge to set.
